Zucchini casserole
Ingredients/Components
- grated carrots - 2 c
- grated Cheddar cheese - 1 c
- onion, finely chopped - 1 item
- melted oleo - 1/3 c
- sour cream or yogurt - 1/2 c
- zucchini, grated - 3 c
- can cream of chicken soup, undiluted - 1 item
- seasoned stuffing mix - 1/2 pkg
How to make zucchini casserole:
Mix stuffing with oleo; cook zucchini slightly and drain well. Combine zucchini, half the stuffing mixture, carrots, onion, soup and sour cream. Place in lightly greased baking dish. Sprinkle other half of stuffing mixture over top. Sprinkle with grated cheese. Bake at 350° for 25 minutes.Recipe categories: Egg, Side dish, Casseroles.
