Ingredients/Components

  • sour cream - 1 c
  • margarine - 1/2 c
  • shredded carrots - 1 c
  • chopped onion - 1 c
  • can cream of chicken soup - 1 item
  • zucchini, sliced - 6 c
  • stuffing mix - 1 (8

How to make zucchini casserole:

Cook sliced squash and onion for 5 minutes in salted water. Drain. Combine soup, carrots and sour cream; fold into drained squash. Set aside. Combine and mix melted margarine and stuffing. Spread half the stuffing in large casserole dish. Add vegetable mixture; cover with remaining stuffing, spreading evenly. Bake at 350° for 25 to 30 minutes.
