- margarine - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1 c
- can cream of chicken soup - 1 item
- zucchini, sliced - 6 c
- stuffing mix - 1 (8
How to make zucchini casserole:
Cook sliced squash and onion for 5 minutes in salted water. Drain. Combine soup, carrots and sour cream; fold into drained squash. Set aside. Combine and mix melted margarine and stuffing. Spread half the stuffing in large casserole dish. Add vegetable mixture; cover with remaining stuffing, spreading evenly.
