Zucchini casserole
Ingredients/Components
- sugar
- salt - 1 item
- stick butter - 1 item
- pepper - 1 item
- large onion, chopped - 1 item
- Cheddar cheese, grated - 1 c
- zucchini, sliced unpeeled - 1 lb
- large can tomatoes no juice - 1 item
- soda crackers, broken - 1/4 lb
How to make zucchini casserole:
Cook zucchini 5 minutes in small amount of water; drain. Cook onion in 1/2 stick butter. Add tomatoes; cook until thick. Add cheese, salt, pepper and sugar. Put crackers in oven with 1/2 stick butter; stir until well coated. Cover bottom of baking dish with zucchini, then alternate with tomato mixture and crackers. Top with crackers.
