  • sugar
  • salt - 1 item
  • stick butter - 1 item
  • pepper - 1 item
  • large onion, chopped - 1 item
  • Cheddar cheese, grated - 1 c
  • zucchini, sliced unpeeled - 1 lb
  • large can tomatoes no juice - 1 item
  • soda crackers, broken - 1/4 lb

How to make zucchini casserole:

Cook zucchini 5 minutes in small amount of water; drain. Cook onion in 1/2 stick butter. Add tomatoes; cook until thick. Add cheese, salt, pepper and sugar. Put crackers in oven with 1/2 stick butter; stir until well coated. Cover bottom of baking dish with zucchini, then alternate with tomato mixture and crackers. Top with crackers. Bake at 350° for 45 minutes to 1 hour.
