Zucchini and tomato casserole
Ingredients/Components
- Parmesan cheese - 1 Tbsp
- oregano - 1 tsp
- medium onion, chopped - 1 item
- medium tomatoes, cut up - 3 item
- to 5 medium zucchini, washed, sliced 1/4-inch thick - 4 item
- dash of salt optional and pepper - 1 item
- or more grated Cheddar cheese this can be fat-free cheese - 1 c
How to make zucchini and tomato casserole:
Mix all ingredients, except cheese, together in a large casserole. Sprinkle Parmesan cheese on mixture. Spread grated Cheddar cheese over all. Bake at 350° for 45 minutes. Makes 6 to 8 servings.Recipe categories: Squash, Side dish, Casseroles.
