Ingredients/Components
- plain yogurt - 8 oz
- salt to taste - 1 item
- medium onion, chopped - 1 item
- stick oleo - 1/2 item
- water chestnuts, sliced - 4 oz
- yellow squash, sliced
- small jar chopped pimento - 1 item
- can mushroom or cream of chicken soup - 1 item
- herb bread stuffing mix - 2 c
How to make yellow squash casserole:
Cook squash tender-crisp; drain. Add next 5 ingredients; stir gently to combine. Melt butter; toss with stuffing mix. Reserve 1/2 cup. Press 1 1/2 cups mix on bottom of 2-quart casserole. Pour squash mixture over and sprinkle the reserved crumbs over. Bake 30 to 40 minutes in 350° oven until browned on top.Recipe categories: Eggs/dairy, Low calorie, Cheese.
