Ingredients/Components

  • water - 3 c
  • chopped onion - 1 c
  • cloves garlic, minced - 2 item
  • can stewed tomatoes - 1 1/2
  • chicken bouillon cubes - 2 item
  • sliced carrots - 1 c
  • can corn - 1 oz
  • can black beans, rinsed and drained - 1 1/2
  • can red kidney beans, rinsed and drained - 1 1/2

How to make vegetable bean soup:

In a 4-quart Dutch oven, combine water, kidney beans, black beans, undrained tomatoes, corn, carrot, onion, bouillon cubes and garlic. Bring to boiling, reduce heat and simmer for 15 minutes.

Check carrots and onion for doneness and off heat. Refrigerate for 2 hours to allow flavors to mellow and slowly reheat. Tastes best served with cornbread or any whole grain bread.
