Ingredients/Components

  • flour - 1 Tbsp
  • butter - 3 Tbsp
  • vinegar - 1/2 c
  • molasses - 1/4 c
  • salad oil - 1/4 c
  • 5 oz
  • garlic powder - 1/4 tsp
  • pepper - 1/4 tsp
  • lettuce leaves - 1 item
  • olive oil - 1 Tbsp
  • green onion strips optional - 1 item
  • Dijon-style mustard - 1 Tbsp
  • grated Mozzarella cheese - 6 Tbsp
  • slices French bread - 2 item
  • thinly sliced green onion - 1/2 c
  • slices bacon, crisp-cooked, drained and crumbled - 2 item
  • can black beans, rinsed and drained - 1 oz
  • soup can water - 1/2 item
  • can navy beans, rinsed and drained - 1 oz
  • can red beans, rinsed and drained - 1 oz
  • torn curly endive - 2 c
  • medium onion or 2 small onions, thinly sliced - 1 item

How to make french onion soup:

In a large bowl, combine beans, celery and green onion.

For dressing, in a screw-top jar, combine vinegar, molasses, oil, mustard and pepper. Cover and shake well to mix. Pour dressing over bean mixture; stir to coat. Cover and chill for 4 to 24 hours, stirring occasionally.

To serve, line a salad bowl or platter with lettuce leaves. Stir curly endive and bacon into bean mixture. Using a slotted spoon, transfer bean mixture to the salad bowl. If desired, garnish with green onion strips. Makes 10 to 12 side-dish servings.
