French onion soup
Ingredients/Components
- flour - 1 Tbsp
- butter - 3 Tbsp
- vinegar - 1/2 c
- molasses - 1/4 c
- salad oil - 1/4 c
- 5 oz
- garlic powder - 1/4 tsp
- pepper - 1/4 tsp
- lettuce leaves - 1 item
- olive oil - 1 Tbsp
- green onion strips optional - 1 item
- Dijon-style mustard - 1 Tbsp
- grated Mozzarella cheese - 6 Tbsp
- slices French bread - 2 item
- thinly sliced green onion - 1/2 c
- slices bacon, crisp-cooked, drained and crumbled - 2 item
- can black beans, rinsed and drained - 1 oz
- soup can water - 1/2 item
- can navy beans, rinsed and drained - 1 oz
- can red beans, rinsed and drained - 1 oz
- torn curly endive - 2 c
- medium onion or 2 small onions, thinly sliced - 1 item
How to make french onion soup:
In a large bowl, combine beans, celery and green onion.For dressing, in a screw-top jar, combine vinegar, molasses, oil, mustard and pepper. Cover and shake well to mix. Pour dressing over bean mixture; stir to coat. Cover and chill for 4 to 24 hours, stirring occasionally.
To serve, line a salad bowl or platter with lettuce leaves. Stir curly endive and bacon into bean mixture. Using a slotted spoon, transfer bean mixture to the salad bowl. If desired, garnish with green onion strips. Makes 10 to 12 side-dish servings.
