Ingredients/Components
- water
- cans chicken broth - 2 oz
- salt and pepper - 1 item
- fresh parsley - 2 Tbsp
- thyme - 1/2 tsp
- large tomato - 1 item
- large zucchini - 1 item
- thinly sliced mushrooms - 1 lb
- celery stalk - 1 item
- tortellini - 1 pkg
How to make tortellini soup:
Slice celery very thin, cut zucchini into matchsticks, dice tomatoes and slice mushrooms. Simmer broth, water, mushrooms, celery, thyme and pepper (10 to 15 minutes). Add pasta and zucchini; cook, uncovered, on medium heat (6 to 7 minutes). Add tomato, parsley and salt. Cook 2 to 3 minutes more.Recipe categories: Soups & stews, Main dish, One Dish meal.
