Zucchini soup
Ingredients/Components
- butter - 2 Tbsp
- chicken broth - 4 c
- wine vinegar - 1 tsp
- medium onions - 2 item
- dill - 1/2 tsp
- to 3 medium zucchini - 2 item
- quick cooking farina - 3 Tbsp
How to make zucchini soup:
Chop onions and brown until golden in butter. Cut zucchini in chunks and stir into onions. In another pot, boil broth. Add broth to onions and zucchini. Add vinegar and dill to zucchini broth and bring to a boil. Sprinkle in farina and lower heat. Simmer 20 minutes, covered. Add a little water if too thick. Put soup in blender and mix until creamy.
