Ingredients/Components
- water - 1 item
- allspice - 1/2 tsp
- chopped carrots - 2 item
- salt and pepper - 1 item
- onion, chopped - 1 item
- parsley - 1 Tbsp
- peppercorns - 1 tsp
- cloves garlic, crushed - 2 item
- stalks celery, chopped - 2 item
- bay leaves - 2 item
- thyme - 1/2 tsp
- dried peas - 1 lb
- large ham hock - 1 item
How to make pea soup:
Soak peas overnight covered by one-inch of water. Combine peas, soaking water and all other ingredients in a 14-inch Dutch oven. Bring to a boil, reduce heat and simmer 1 1/2 hours. Remove ham hock, cut off meat, dice and then return meat to soup. Remove peppercorns and bay leaves. Add salt and pepper to taste.Recipe categories: Weeknight, Vegetables, Soups & stews.
