Ingredients/Components

  • water - 1 item
  • allspice - 1/2 tsp
  • chopped carrots - 2 item
  • salt and pepper - 1 item
  • onion, chopped - 1 item
  • parsley - 1 Tbsp
  • peppercorns - 1 tsp
  • cloves garlic, crushed - 2 item
  • stalks celery, chopped - 2 item
  • bay leaves - 2 item
  • thyme - 1/2 tsp
  • dried peas - 1 lb
  • large ham hock - 1 item

How to make pea soup:

Soak peas overnight covered by one-inch of water. Combine peas, soaking water and all other ingredients in a 14-inch Dutch oven. Bring to a boil, reduce heat and simmer 1 1/2 hours. Remove ham hock, cut off meat, dice and then return meat to soup. Remove peppercorns and bay leaves. Add salt and pepper to taste.
