Ingredients/Components

  • dried beans - 1 lb
  • water - 3 qt
  • slices bacon - 10 item
  • chopped potatoes - 2 c
  • chopped carrots - 2 c
  • salt - 4 tsp
  • bay leaf - 1 item
  • onions - 2 c
  • celery - 2 c
  • pepper - 1/2 tsp
  • tomato juice - 1 qt

How to make bean and bacon soup:

Rinse beans and soak in 3 quarts water. Fry bacon until crisp and add to beans. Cook onions in bacon drippings until soft. Add to beans along with drippings. Add all the other ingredients. Boil soup to a boil until vegetables are soft. Remove bay leaf. Put in jars and pressure cook 10 pounds for 30 minutes.

When opening combine 1/3 cup flour with 1 cup milk. Stir in with the soup after it is heated. Bring to a boil, then add 3 cups or more milk. Or if preferred just add a quart of milk, no flour.
