Ingredients/Components
- salt - 1/2 tsp
- pepper - 1/4 tsp
- red wine vinegar - 1 Tbsp
- chopped onion - 3/4 c
- cloves garlic, minced - 2 item
- oregano - 1 Tbsp
- cooked rice
- chopped fresh basil or 1 tsp - 2 Tbsp
- diced zucchini - 2/3 c
- shredded Provolone cheese - 1/2 c
- grated Parmesan cheese, divided - 6 Tbsp
- large ripe, firm tomatoes - 6 item
- mild Italian sausage, casing removed - 8 oz
How to make stuffed tomatoes:
Preheat oven to 350°. Slice tops off tomatoes and discard. Using small knife, remove center pulp from tomatoes, leaving shells intact. Discard seeds, chop pulp and reserve.
