Squash casserole
Ingredients/Components
- eggs, beaten - 2 item
- stick melted margarine - 1/2 item
- salt and pepper as desired - 1 item
- grated cheese optional - 1/2 c
- fresh squash, cooked, or 2 cans with chopped onion as desired - 1 qt
- bread crumbs or 18 crumbled Ritz or Town House crackers - 1/2 c
How to make squash casserole:
Mix all ingredients well and pour into baking dish (spray with Pam). Top with additional cracker crumbs mixed with melted margarine. Use as many crackers and margarine as necessary to cover casserole well. Bake at 350° until firm and lightly browned.Note: Onion is more tender if cooked with squash before mixing casserole. Squash should be cool before mixing.
