Baked zucchini
Ingredients/Components
- eggs - 3 item
- pkg - 15 oz
- salt - 1/4 tsp
- salad oil - 1 item
- garlic powder - 1/4 tsp
- Parmesan cheese - 1 item
- bread crumbs
- tomato sauce - 1 item
- dried oregano - 1/4 tsp
- dried basil - 1/4 tsp
- large zucchini - 1 item
How to make baked zucchini:
Beat eggs with fork. Mix bread crumbs, oregano, basil, salt and garlic on a large flat dish. Slice zucchini 1/4 to 1/2-inch thick. One at a time, dip into egg and coat with bread crumb mix. Cover bottom of pan with oil. Fry zucchini a few at a time, turning often, until brown, 2 to 3 minutes. Thinly slice cheese. Spread some tomato sauce in pan, single layer of zucchini. Spoon tomato sauce and layer Mozzarella cheese. Repeat layers, topping with Parmesan cheese and bake at 350° for 10 to 15 minutes. Serve.Recipe categories: Squash, Side dish, Vegetables.
