Ingredients/Components

  • butter or margarine, softened - 2 Tbsp
  • grated cheese - 1/2 c
  • can cream of mushroom soup - 1 item
  • onion, chopped - 1/4 c
  • green pepper, chopped - 1/4 c
  • pimento, chopped - 1/4 c
  • mashed squash - 2 c
  • sliced squash until makes 2 c

How to make squash casserole:

Combine squash with salted water and cook until tender. Remove from heat, drain well. Mash with potato masher. Combine remaining ingredients with squash mixture and pour in a greased casserole dish. Top with crumbs made with leftover cornbread. Sprinkle with poultry seasoning and onion powder. Bake for 30 minutes at 350° until bubbly.
