Squash casserole
Ingredients/Components
- eggs, beaten - 2 item
- minced onions - 1/2 c
- salt & pepper - 1 item
- sliced squash cooked & drained - 1 qt
- medium cheddar cheese - 1/2 c
- crushed crackers ritz
How to make squash casserole:
Put squash in large casserole dish & mash. Add cheese leaving enough to cover later. Stir in crackers & minced onions. Add eggs & stir quickly to prevent them from cooking. Salt & pepper to taste. Cover with rest of cheddar cheese. Cook at 350 degrees for 20 minutes. Uncover and cook an additional 20 minutes or until slightly brown.Recipe categories: Squash, Side dish, Casseroles.
