Ingredients/Components

  • tsp dry mustard - 1 item
  • C sugar - 5 item
  • C chopped squash about 20 sm/med squash - 12 item
  • C onion, chopped about 4 lge onions - 4 item
  • Tbsp plain salt - 4 item
  • 1/2 C apple cider vinegar - 2 item
  • 1/2 Tbsp corn starch - 1 item
  • tsp turmeric - 1 item
  • oz jar pimento can use chopped red bell pepper - 4 item
  • pod hot pepper, chopped and seeded - 1 item

How to make squash relish:

Sterilize pint/quart jars and lids. (Recipe makes about 3-4 quart jars.)

Mix together squash, onions, and salt. Store in refrigerator overnight. Remove and drain well in a colander. Add remaining ingredients. Bring to a boil and immediately reduce to a slow boil. Cook until thickened as you like, approximately 30-45 minutes. Place in sterilized jars and put seals and lids on. As the jars begin to cool you should hear the seal pop in as they seal.
