Ingredients/Components

  • sour cream - 1/2 pt
  • stick margarine - 1 item
  • can cream of chicken soup - 1 item
  • chopped pimento - 2 Tbsp
  • small chopped onion - 1 item
  • herb seasoned croutons - 3/4 pkg
  • medium grated carrot - 1 item
  • yellow squash fresh or frozen - 2 lb

How to make squash casserole:

Melt half of margarine in casserole dish. Mix in croutons on bottom of casserole dish. Cook squash and drain well. Mix all other ingredients. Season with salt and pepper to taste. Pour over croutons and sprinkle reserved crumbs on top. Bake at 350° for 20 to 30 minutes or until bubbly. Can be prepared ahead of time. Very good reheated (microwaved). Can also be frozen.
