Squash casserole
Ingredients/Components
- eggs - 2 item
- sliced almonds - 1 item
- can cream of chicken soup - 1 item
- Ritz crackers - 1 item
- mayonnaise - 1/2 c
- salt to taste - 1 item
- squash - 2 3
- Equal sweetener or 2 tsp - 2 pkg
- Cheddar cheese, grated small - 1 item
How to make squash casserole:
Wash, slice and boil squash until tender. Drain. Mix soup, mayonnaise, sugar and well beaten eggs together. Add squash to this mixture. Pour 1/2 squash mixture into 9 x 13-inch casserole dish. Sprinkle finely crushed Ritz cracker crumbs over the squash mixture and drizzle a little squeeze Parkay butter over crumbs, then grated cheese. Repeat layer of squash, cracker crumbs and cheese again. Sprinkle sliced almonds on top. Cook at 350° for about 25 minutes until set.Recipe categories: Squash, Side dish, Casseroles.
