Squash casserole
Ingredients/Components
- squash zucchini or summer squash, sliced in 1/4-inch slices - 2 lb
- water - 1/2 c
- salt - 1/2 tsp
- onions, chopped - 1 c
- red or green pepper, chopped - 1 c
- margarine, melted - 1/4 c
- egg, beaten - 1 item
- shredded Cheddar cheese - 1 c
- can sliced water chestnuts, drained - 1 oz
- mayonnaise - 2/3 c
- sugar - 2 tsp
- pepper - 1/4 tsp
How to make squash casserole:
Combine squash, water and salt and cook until just barely tender. Drain and set aside. Saute onions and peppers in margarine until crisp-tender (about 3 minutes). Combine vegetables, egg and next 5 ingredients. Spoon into greased casserole or 9 x 13-inch pan. Bake at 350° for 30 minutes.Recipe categories: Squash, Side dish, Casseroles.
