Ingredients/Components
- chopped onion - 1 item
- can cream of mushroom soup - 1 item
- Velveeta cheese, cubed - 1 lb
- stick oleo - 1/2 item
- can mushrooms, drained - 1 item
- potatoes, sliced - 5 lb
- bell pepper, chopped - 1 item
- can Ro-Tel tomatoes, chopped with juice - 1 item
How to make rotel potatoes:
Place sliced potatoes into flat casserole dish. Saute onion and bell pepper in oleo until done. Add mushrooms, soup and Ro-Tel; heat and stir until blended. Add cubed Velveeta and pour mixture over potatoes. Bake at 350° for 20 to 30 minutes until flavors blend. Serves 10 to 15.Recipe categories: Side dish, Potato, Vegetables.
