Rotel potatoes
Ingredients/Components
- can Ro-Tel tomatoes - 1 oz
- can cream of mushroom soup* - 1 3/4
- can Cheddar cheese soup - 1 3/4
- soup can or more of water - 1/2 item
- onion, chopped - 1 Tbsp
- stick margarine - 1/2 item
- to 12 small potatoes, peeled and sliced - 10 item
How to make rotel potatoes:
Preheat oven to 350°. In a bowl, mix Ro-Tel tomatoes, cheese and cream of mushroom soups, water, onion, salt and pepper to taste. Pour mixture over potatoes in a greased baking dish. Place margarine slices on top and bake for 1 hour or until potatoes are fork-tender. (Cheese is salty enough.) Serve with cornbread or tortilla chips.*I use cream of celery soup.
