Rhubarb cake
Ingredients/Components
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- brown sugar
- baking powder - 1 tsp
- baking soda - 1 tsp
- shortening - 1/2 c
- unbleached flour
- sour milk or buttermilk - 1 c
- rhubarb, cut fine
How to make rhubarb cake:
Mix shortening, brown sugar, eggs, vanilla and buttermilk. Gradually add flour, salt, baking soda and baking powder. Add rhubarb and mix just enough to coat it completely with batter. Put in a 9 x 13-inch pan and sprinkle with cinnamon sugar. (I mix 2 or 3 tablespoons sugar with about 1/4 to 1/2 teaspoon cinnamon.)Bake at 350° for 35 to 40 minutes. May be served warm or cool, plain or with some high caloric whimsy like whipped cream or ice cream.
