Ingredients/Components

  • sugar
  • milk - 1/3 c
  • salt - 1/4 tsp
  • butter
  • eggs, beaten - 2 item
  • baking soda - 1 tsp
  • plain flour - 2 c
  • ground cloves - 1/4 tsp
  • ground cinnamon - 1 tsp
  • ground allspice - 1/4 tsp
  • Cinnamon - 1 item
  • raw rhubarb, cut into 1/4 inch pieces - 3 c
  • Stir in mixed dry ingredients
  • Walnuts, optional - 1 item

How to make rhubarb cake:

Cream together sugar and butter; add eggs and milk. Stir in mixed dry ingredients. Mix well. Fold in rhubarb. Batter will be thick. Spread into a well greased 9 x 13 inch pan.Topping: Sugar Cinnamon Walnuts, optional Sprinkle top of batter with a mixture of a little sugar and cinnamon. A few chopped walnuts can be added also. Bake at 350° degrees for 35 minutes or until toothpick inserted into middle comes out clean.
