Ingredients/Components
- small rabbit, cut in pieces - 1 item
- salt and pepper - 1 item
- oregano - 1/8 tsp
- fine, dry bread crumbs - 1/2 c
- milk - 2 Tbsp
- egg - 1 item
- flour - 1/4 c
How to make rabbit:
Sprinkle each rabbit piece with salt, pepper and oregano. Combine milk and egg. Beat slightly. Dip seasoned rabbit in flour and then in egg mixture, and lastly in bread crumbs. Brown on both sides in 1 1/2 inches of fat (lard), heated to 375° on deep fat thermometer. Cook 20 to 30 minutes until tender. Drain on paper towel.
