Ingredients/Components

  • cinnamon - 1 tsp
  • milk - 2 c
  • flour - 5 Tbsp
  • butter - 2 Tbsp
  • egg - 1 item
  • Parmesan cheese - 1 item
  • ground beef
  • salt and pepper to taste - 1 item
  • can tomato paste - 1 oz
  • salt and pepper - 1 item
  • medium onion, minced - 1 item
  • grated Swiss cheese - 3/4 c
  • Salt and pepper to taste
  • large eggplant, cut in chunks and salted do not peel - 1 item

How to make moussaka:

Brown meat and onion in butter. Salt and pepper to taste. Add cinnamon. Dilute tomato paste with 2 cans of water and add to mixture. Simmer 15 to 20 minutes. Rinse and drain eggplant. Simmer in boiling water for 10 minutes; drain. Arrange eggplant slices in shallow casserole dish. Add meat sauce. Cover with grated cheese.Sauce:4 Tbsp. butter5 Tbsp. flour2 c. milk salt and pepper1 egg Parmesan cheese Melt butter; stir in flour. Add milk, little by little, beating until smooth and thick. Add salt and pepper to taste. Remove from heat. Add egg and beat until well mixed. Pour over casserole. Sprinkle generously with Parmesan cheese. Bake at 350° for 1 hour or until golden brown. May be made the day before and refrigerated. Serves 4 or 5.
