  • cinnamon - 1/2 tsp
  • salt - 1/2 tsp
  • nutmeg - 1/8 tsp
  • pumpkin - 2 c
  • ginger - 1/2 tsp
  • skim milk - 1 c
  • liquid sweetener - 2 Tbsp
  • eggs, slightly beaten - 2 item

How to make pumpkin custard:

Combine eggs, sweetener and pumpkin. Blend well. Add salt, spices and milk; mix well. Pour into 8-inch pie pan. Bake in a moderate 350° oven 50 to 60 minutes or until done. Cut and serve like pie pieces, although it has no pastry crust.

Makes 6 servings. One serving: 1 meat, 1-B vegetable exchange.
