Pumpkin custard
Ingredients/Components
- cinnamon - 1/2 tsp
- salt - 1/2 tsp
- nutmeg - 1/8 tsp
- pumpkin - 2 c
- ginger - 1/2 tsp
- skim milk - 1 c
- liquid sweetener - 2 Tbsp
- eggs, slightly beaten - 2 item
How to make pumpkin custard:
Combine eggs, sweetener and pumpkin. Blend well. Add salt, spices and milk; mix well. Pour into 8-inch pie pan. Bake in a moderate 350° oven 50 to 60 minutes or until done. Cut and serve like pie pieces, although it has no pastry crust.Makes 6 servings. One serving: 1 meat, 1-B vegetable exchange.
