Ingredients/Components

  • sugar
  • eggs - 2 item
  • cornstarch - 1/3 c
  • margarine - 1/4 c
  • lemon juice - 1 tsp
  • crushed pineapple
  • pineapple juice - 2 c

How to make pineapple cream pudding:

Combine sugar, cornstarch and pineapple juice. Cook over low heat until thickened, stirring constantly. Pour a few tablespoons of the hot liquid over beaten eggs and stir well. Return to stove and cook another 5 minutes over very low heat, stirring constantly. Stir in margarine, lemon juice and crushed pineapple. Cool and serve with a dollop of whipped topping.
