Pineapple pound cake
Ingredients/Components
- sugar
- milk - 1/4 c
- vanilla extract - 1 tsp
- butter - 1/2 lb
- baking powder - 1 tsp
- shortening - 1/2 c
- large eggs - 6 item
- powdered sugar
- margarine - 1/4 c
- sifted all-purpose flour - 3 c
- pineapple, drained - 1 c
- undrained crushed pineapple and juice - 3/4 c
How to make pineapple pound cake:
Cream shortening, butter and sugar. Add eggs, one at a time, beating thoroughly after each addition. Sift flour with baking powder. Add to creamed mixture, one spoonful at a time alternately with milk. Add vanilla; stir in crushed pineapple and juice and blend well. Pour into well-greased 10-inch tube pan. Place in cold oven. Bake at 325° for 1 1/2 hours. Let stand in pan 10 minutes and run knife around edge to remove to rack. Combine butter, powdered sugar and 1 cup drained pineapple.
