Ingredients/Components

  • oatmeal - 1 c
  • boiling water
  • white sugar - 1 c
  • brown sugar - 1 c
  • butter - 1/2 c
  • eggs - 2 item
  • vanilla - 1 tsp
  • flour
  • salt - 1/2 tsp
  • baking soda - 1 tsp
  • Preheat oven to 350°
  • milk - 3 Tbsp
  • coconut - 3/4 c

How to make oatmeal cake:

Soak oatmeal in boiling water. Preheat oven to 350°. While oatmeal cools, cream butter and sugars. Beat in eggs, vanilla and oatmeal. Mix flour, salt and baking soda in a bowl and add to mixture. Pour into 9 x 13 cake pan. Bake for 25 to 30 minutes.Frosting:1/4 c. butter1/2 c. brown sugar3 Tbsp. milk3/4 c. coconut Mix frosting ingredients, will not be thick. Spread carefully on hot cake. Put back in oven and carefully broil until brown.
