Ingredients/Components
- oatmeal - 1 c
- boiling water
- white sugar - 1 c
- brown sugar - 1 c
- butter - 1/2 c
- eggs - 2 item
- vanilla - 1 tsp
- flour
- salt - 1/2 tsp
- baking soda - 1 tsp
- Preheat oven to 350°
- milk - 3 Tbsp
- coconut - 3/4 c
How to make oatmeal cake:
Soak oatmeal in boiling water. Preheat oven to 350°. While oatmeal cools, cream butter and sugars. Beat in eggs, vanilla and oatmeal. Mix flour, salt and baking soda in a bowl and add to mixture. Pour into 9 x 13 cake pan. Bake for 25 to 30 minutes.Frosting:1/4 c. butter1/2 c. brown sugar3 Tbsp. milk3/4 c. coconut Mix frosting ingredients, will not be thick. Spread carefully on hot cake.
