Ingredients/Components

  • cinnamon - 1 tsp
  • eggs - 2 item
  • vanilla - 1 tsp
  • milk - 2 Tbsp
  • salt - 1 tsp
  • flour
  • brown sugar - 1 c
  • coconut - 1 c
  • baking powder - 1 tsp
  • baking soda - 1 tsp
  • boiling water
  • shortening - 1/2 c
  • white sugar - 1 c
  • quick oatmeal - 1 c
  • nuts if desired - 1/2 c
  • Cream the shortening, brown sugar, white sugar and eggs

How to make oatmeal cake:

Pour the boiling water over the oatmeal and let stand 20 minutes. Cream the shortening, brown sugar, white sugar and eggs. Add oatmeal to this mix. Sift together the flour, salt, cinnamon, baking soda and baking powder. Add to first mix. Add the nuts, if desired. Bake in oblong pan 35 minutes at 350°. Do not cool to put topping on.Topping:6 Tbsp. butter, melted1 c. brown sugar2 Tbsp. milk1 tsp. vanilla1 c. coconut Place back in oven until bubbly and light brown, 3 to 5 minutes.
