Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 3 c
  • can crushed pineapple, drained - 1 oz
  • salad oil
  • finely chopped nuts - 1 c
  • box powdered sugar - 1 item
  • grated, raw carrots chop in Oscar - 3 c
  • Combine oil and sugar; mix well

How to make carrot cake:

Sift the flour with baking powder, soda and cinnamon. Combine oil and sugar; mix well. Add sifted dry ingredients half at a time to oil-sugar mixture. Add eggs, alternating with dry ingredients; mix well. Add carrots and pineapple. Stir in nuts and vanilla. Pour batter into a 9 x 13-inch oblong pan, lightly oiled. Bake at 325° for 1 hour and 10 minutes. Frost when cool.Frosting:1 stick margarine, softened1 (8 oz.) pkg. cream cheese, softened1 box powdered sugar Cream together the margarine and cream cheese; mix in powdered sugar.
