Ingredients/Components
- sugar - 1 c
- vinegar - 1/2 c
- salad oil - 1/2 c
- salt and pepper to taste - 1 item
- carrots - 2 lb
- can tomato soup - 1 item
- large onion - 1 item
- large bell pepper - 1 item
- mustard dry - 1 Tbsp
How to make marinated carrots:
Mix the last 6 ingredients together. Cook carrots until fork-tender; cool. Slice onion and bell pepper. Put carrots in container, along with bell pepper and onion slices. Pour marinade over vegetables and let marinate overnight.Strain vegetables very well; save marinade and refrigerate. Will keep for a month or longer; may use marinade over and over! Serve hot or cold on lettuce leaves.
