Carrot-pineapple cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- vanilla - 2 tsp
- salt
- eggs, beaten - 3 item
- baking powder - 1 tsp
- baking soda
- can crushed pineapple - 1 3/4
- sifted flour - 3 c
- salad oil
- finely chopped nuts
- raw carrots, grated - 2 c
How to make carrot-pineapple cake:
Grease and lightly flour 9 x 13-inch pan or tube pan.Mix together dry ingredients. Drain pineapple, saving syrup. Add syrup to dry mixture; add eggs, oil and vanilla. Beat for 3 minutes. Stir in pineapple, carrots and nuts. Bake at 325° for about 1 1/2 hours in tube pan or until done in oblong pan. Cool for 10 minutes before unmolding. Frost with currant-nut or powdered sugar icing.
