Ingredients/Components

  • salt
  • water - 8 c
  • chicken broth - 2 c
  • sage - 1/4 tsp
  • oregano - 1/2 tsp
  • onion, chopped - 1 c
  • cayenne - 1/4 tsp
  • can tomatoes - 1 oz
  • medium carrots, sliced - 2 item
  • stalks celery, diced - 2 item
  • lentils - 2 c
  • hot sausage optional - 1/2 lb
  • pepperoni, thinly sliced - 8 oz
  • sweet sausage optional - 1/2 lb

How to make lentil soup:

Wash lentils and remove any extraneous particles. If using sausage, cut into small pieces and fry. Drain. Place lentils and sausage in 6-quart pot with water, chicken broth, pepperoni, onion, tomatoes, salt, oregano, sage and cayenne. Bring to boil. Reduce heat, cover and simmer for 30 minutes, stirring occasionally. Add carrots and celery; cover and simmer for another 40 minutes.

Delicious, hearty soup; wonderful served with a crusty Italian bread on a cold day!
