Ingredients/Components

  • sugar - 1/4 c
  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1/2 tsp
  • flour
  • baking powder - 1 tsp
  • nuts optional - 1/2 c
  • white sugar - 1 c
  • juice of 1 lemon
  • shortening or margarine - 1/2 c
  • grated rind of 1 lemon

How to make lemon loaf:

Cream shortening. Add sugar and eggs. Sift dry ingredients and add to creamed mixture alternately with milk. Add lemon rind and nuts.

Pour batter into a large loaf pan. Bake at 350° for 45 to 60 minutes.

Dissolve 1/4 cup sugar in juice of a lemon. Pour this over baked lemon loaf.
