Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- milk - 1/2 c
- salt - 1/2 tsp
- baking powder - 2 tsp
- shortening - 1/2 c
- chopped walnuts - 1/2 c
- lemon juice - 2 Tbsp
- grated lemon rind - 2 tsp
- presifted flour
- Cream shortening and sugar; add eggs and beat until light and fluffy
How to make lemon loaf:
Preheat oven to 350°. Cream shortening and sugar; add eggs and beat until light and fluffy. Blend or sift together flour, baking powder and salt; add chopped walnuts and grated lemon rind. Add dry ingredients to creamed mixture alternately with milk. Pour batter into a greased 9 x 5-inch loaf pan. Let stand for 20 minutes. Bake in a preheated 350° oven for 60 to 70 minutes.Glaze:1/4 c. sugar2 Tbsp. lemon juice Heat lemon juice and sugar using medium heat until dissolved. Cool mixture. When loaf is baked, remove from pan and slowly pour the glaze mixture of lemon juice and sugar over the top of the bread. Cool. Cover and let stand for 24 hours before serving.This tastes delicious the next day.
