Orange raisin cake
Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- soda - 1/2 tsp
- buttermilk - 2/3 c
- baking powder - 1 tsp
- raisins - 1 c
- margarine - 1/2 c
- grated orange rind - 2 Tbsp
- Beat in eggs
- grated rinds of oranges and lemon - 1 item
How to make orange raisin cake:
Cream margarine, sugar and orange rind. Beat in eggs. Mix raisins with 1/4 cup dry ingredients. Mix dry ingredients and add to creamed mixture, alternately with buttermilk. Add raisins and nuts. Pour into 9 x 13-inch greased and floured pan. Bake at 350° for 50 minutes.Glaze: juice of 2 oranges and 1/2 lemon grated rinds of oranges and lemon1/2 c. sugar Let stand while cake is baking, then pour over hot cake.
