Ingredients/Components
- all-purpose flour - 3 c
- sugar - 2 c
- salt - 1 tsp
- soda - 1 tsp
- cinnamon - 1 tsp
- eggs, beaten - 3 item
- oil - 1 c
- vanilla flavoring
- can crushed pineapple undrained - 1 oz
- chopped pecans, divided 1 c - 2 c
- mashed bananas - 2 c
- Cream Cheese Frosting - 1 item
- Add eggs and oil, stirring until dry ingredients are moistened
- butter or margarine - 1/2 c
- box confectioners sugar - 1 lb
- vanilla - 1 tsp
How to make hummingbird cake:
Sift dry ingredients in a large bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup of pecans and bananas. Spoon batter into 3 well-greased and floured 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Cool in pans 10 minutes.
