  • all-purpose flour - 3 c
  • sugar - 2 c
  • salt - 1 tsp
  • soda - 1 tsp
  • cinnamon - 1 tsp
  • eggs, beaten - 3 item
  • oil - 1 c
  • vanilla flavoring
  • can crushed pineapple undrained - 1 oz
  • chopped pecans, divided 1 c - 2 c
  • mashed bananas - 2 c
  • Cream Cheese Frosting - 1 item
  • Add eggs and oil, stirring until dry ingredients are moistened
  • butter or margarine - 1/2 c
  • box confectioners sugar - 1 lb
  • vanilla - 1 tsp

How to make hummingbird cake:

Sift dry ingredients in a large bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup of pecans and bananas. Spoon batter into 3 well-greased and floured 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Cool in pans 10 minutes. Turn out on rack and cool.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese1/2 c. butter or margarine1 lb. box confectioners sugar1 tsp. vanilla Beat until creamy and then fold in pecans.
