  • all-purpose flour - 3 c
  • sugar - 2 c
  • salt - 1/2 tsp
  • soda - 1 tsp
  • ground cinnamon - 1 tsp
  • eggs, beaten - 3 item
  • vanilla
  • can crushed pineapple, drained - 1 oz
  • chopped bananas - 2 c
  • chopped pecans - 1 c
  • oil
  • Add eggs and oil, stirring until dry ingredients are moistened
  • margarine, softened - 1/2 c
  • box confectioners sugar - 1 lb
  • milk - 2 Tbsp

How to make hummingbird cake:

Combine dry ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple and finely chopped nuts; add bananas. Pour batter into 3 well-greased pans lined with wax paper. Bake for 25 to 30 minutes at 350°. Cool cake and ice with Cream Cheese Frosting.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese1/2 c. margarine, softened1 lb. box confectioners sugar2 tsp. vanilla2 Tbsp. milk Combine cream cheese and margarine; beat until smooth. Add powdered sugar and milk; beat until fluffy. Add vanilla.
