Hummingbird cake
Ingredients/Components
- all-purpose flour - 3 c
- sugar - 2 c
- salt - 1/2 tsp
- soda - 1 tsp
- ground cinnamon - 1 tsp
- eggs, beaten - 3 item
- vanilla
- can crushed pineapple, drained - 1 oz
- chopped bananas - 2 c
- chopped pecans - 1 c
- oil
- Add eggs and oil, stirring until dry ingredients are moistened
- margarine, softened - 1/2 c
- box confectioners sugar - 1 lb
- milk - 2 Tbsp
How to make hummingbird cake:
Combine dry ingredients in a large mixing bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple and finely chopped nuts; add bananas. Pour batter into 3 well-greased pans lined with wax paper. Bake for 25 to 30 minutes at 350°. Cool cake and ice with Cream Cheese Frosting.Cream Cheese Frosting:1 (8 oz.) pkg. cream cheese1/2 c. margarine, softened1 lb. box confectioners sugar2 tsp. vanilla2 Tbsp. milk Combine cream cheese and margarine; beat until smooth.
