Ingredients/Components

  • plain flour
  • sugar - 2 c
  • baking soda - 1 tsp
  • salt - 1 tsp
  • cinnamon - 1/2 tsp
  • eggs, beaten - 3 item
  • can crushed pineapple - 8 oz
  • vanilla - 1 tsp
  • chopped nuts - 1/2 c
  • salad oil - 1 c
  • cream cheese, softened
  • margarine - 1/2 c
  • box confectioners sugar - 1 item

How to make hummingbird cake:

Icing:3 oz. cream cheese, softened1/2 c. margarine1 tsp. vanilla1 box confectioners sugar1/2 c. chopped nuts Combine dry ingredients. Add eggs, oil and vanilla. Stir until moist. Fold in pineapple and nuts. Bake at 350° for 25 minutes or more. Mix ingredients for icing until well blended. After cake has cooled, spread icing on cake. Sprinkle nuts onto the cake top.
