Ingredients/Components
- water
- salt and pepper - 1 tsp
- dried black-eyed peas - 1/2 lb
- onion - 1 item
- uncooked long grain rice - 1 c
- slab bacon - 1/4 item
- fresh hot pepper, chopped - 1/4 tsp
How to make hoppin' john:
Heat peas and water to boiling stage in 2 qt. sauce pan; boil 2 minutes. Remove from heat and let stand 1 hour. Cut bacon into 8 pieces. Stir bacon, onion, and hot pepper into peas. Heat to boiling stage; reduce heat. Cover and simmer until peas are tender (1 to 1 1/2 hours). Stir in rice (uncooked), salt and pepper. Cover and simmer, stirring occasionally until rice is tender (about 25 minutes). Stir in additional water if necessary to cook rice.Recipe categories: Side dish, Beans, Rice.
