Ingredients/Components
- water
- chopped onions - 1/2 c
- can Italian style stewed tomatoes - 1 oz
- converted long grain rice - 1 c
- cans black-eyed peas, drained and rinsed - 2 oz
How to make hoppin' john:
Mix all ingredients in medium saucepan. Heat to boiling. Reduce heat. Cover and simmer 20 minutes. Let stand covered 5 minutes. A Southern favorite lightened up. Yields 8 servings. Has 195 calories, fat free.Recipe categories: Side dish, Beans, Rice.
