Zucchini pickles
Ingredients/Components
- sugar - 2 c
- salt - 1/4 c
- cider vinegar - 2 c
- dry mustard - 1/2 tsp
- celery seed - 1 tsp
- mustard seed - 1 tsp
- turmeric - 1 tsp
- zucchini squash, sliced - 2 3
- or 2 large onions, sliced - 1 item
How to make zucchini pickles:
Slice squash and onions. Cover with cold water and salt. Let stand for 2 hours; drain.Boil sugar, vinegar and spices; pour over squash and onions and let stand another 2 hours.
Recipe keeps well in refrigerator. (If canning, boil 5 minutes and can.)
