Ingredients/Components

  • sugar - 2 c
  • salt - 1/4 c
  • cider vinegar - 2 c
  • dry mustard - 1/2 tsp
  • celery seed - 1 tsp
  • mustard seed - 1 tsp
  • turmeric - 1 tsp
  • zucchini squash, sliced - 2 3
  • or 2 large onions, sliced - 1 item

How to make zucchini pickles:

Slice squash and onions. Cover with cold water and salt. Let stand for 2 hours; drain.

Boil sugar, vinegar and spices; pour over squash and onions and let stand another 2 hours.

Recipe keeps well in refrigerator. (If canning, boil 5 minutes and can.)
