Ingredients/Components

  • vegetable oil - 1 item
  • chopped black olives - 1 item
  • chopped green onions - 1 item
  • enchilada sauce - 1 item
  • tortillas - 1 item
  • grated Cheddar cheese or Monterey Jack - 1 item
  • strips of cooked beef, chicken or ground beef - 1 item

How to make enchiladas:

Prepare and set aside in separate dishes the onions, cheese, olives and cooked beef. Heat enchilada sauce in shallow pan. Heat oil in frying pan. Spoon 2 to 3 spoonfuls of hot enchilada sauce in bottom of baking dish; spread around. Fry corn tortillas quickly (2 to 4 seconds each side) in hot oil. Dip in sauce. Lay flat in baking dish. In middle of tortilla place desired amounts of meat, onions, olives and cheese. Wrap into enchilada shape, place seam side down, and move to end of pan. Proceed until pan is full. Pour remaining onions and olives over top of enchiladas. Top all with generous amount of grated cheese. Bake at 350° for approximately 20 to 25 minutes. Serve hot.
