Eggplant parmesan
Ingredients/Components
- water - 2 tsp
- egg whites - 2 item
- Parmesan cheese - 1 item
- bread crumbs - 2 c
- oregano - 1 tsp
- tomato sauce - 8 oz
- Mozzarella cheese - 16 oz
- garlic - 1 tsp
- nonstick spray - 1 item
- lightly, firm eggplant - 1 item
How to make eggplant parmesan:
Cut eggplant in 1/2-inch slices. Grate the cheese. Combine the tomato sauce, oregano and garlic. Combine the egg whites and water in a shallow bowl and put the bread crumbs in another.Coat the eggplant slices in the egg and water, then the bread crumbs. Cook in skillet with nonstick spray on medium-high heat until light brown on both sides. Place in a casserole dish in one layer. Put sauce on top of each slice and then cheese. Bake at 300° for 25 to 30 minutes. Sprinkle Parmesan cheese on top.
