Ingredients/Components

  • cooking oil - 1 item
  • garlic powder - 1 item
  • Parmesan cheese - 1/2 c
  • salt optional - 1 item
  • bread crumbs - 1 item
  • oregano - 1/2 tsp
  • basil - 1/2 tsp
  • parsley - 2 Tbsp
  • tomato sauce - 2 c
  • Mozzarella cheese - 1/2 lb
  • large eggplant - 1 item
  • egg, beaten with milk - 1 item

How to make eggplant parmesan:

Peel eggplant and slice. Dip slices in egg and milk mixture, then into bread crumbs. Cover bottom of frying pan with cooking oil and fry eggplant. Sprinkle each slice with small amount of garlic powder while frying. Add more oil as necessary.

Meanwhile, simmer tomato sauce, parsley, basil and oregano for 15 minutes, stirring occasionally. Alternate layers of sauce, eggplant, Parmesan cheese and Mozzarella cheese in casserole dish. Bake at 350° for 30 minutes.
