Eggplant fritters
Ingredients/Components
- oleo - 4 tsp
- eggs, well beaten - 2 item
- salt and pepper to taste - 1 item
- chopped parsley - 1 Tbsp
- large onion, chopped - 1 item
- bell pepper, chopped - 1/2 item
- eggplant - 2 item
- or 3 green onion tops, chopped - 2 item
How to make eggplant fritters:
Boil eggplant until tender; peel and mash well. Add all ingredients to eggplant. Add enough flour to make a stiff batter. Drop by spoonful in hot oil. Brown; drain on paper. Serve hot.Recipe categories: Squash, Side dish, Vegetables.
