Ingredients/Components

  • oleo - 4 tsp
  • eggs, well beaten - 2 item
  • salt and pepper to taste - 1 item
  • chopped parsley - 1 Tbsp
  • large onion, chopped - 1 item
  • bell pepper, chopped - 1/2 item
  • eggplant - 2 item
  • or 3 green onion tops, chopped - 2 item

How to make eggplant fritters:

Boil eggplant until tender; peel and mash well. Add all ingredients to eggplant. Add enough flour to make a stiff batter. Drop by spoonful in hot oil. Brown; drain on paper. Serve hot.
