- salt - 1 item
- flour - 1/2 c
- baking powder - 2 tsp
- large egg - 1 item
- eggplant - 1 item
How to make eggplant fritters:
Peel and cube eggplant. Cook in boiling, salted water until tender; drain and mash. Beat eggs; blend in flour, sugar, baking powder, eggplant and salt. Drop by teaspoons in hot fat, turning to brown.Recipe categories: Squash, Side dish, Vegetables.
