Blueberry streusel muffins
Ingredients/Components
- sugar - 1/3 c
- cinnamon - 1/4 tsp
- vanilla - 1/2 tsp
- milk - 1 c
- salt - 1/2 tsp
- flour - 2 c
- brown sugar - 2 Tbsp
- baking powder - 3 tsp
- vegetable oil - 1/4 c
- large egg - 1 item
- fresh blueberries - 1 c
- cold margarine or butter
How to make blueberry streusel muffins:
Topping:2 Tbsp. cold margarine or butter2 Tbsp. brown sugar1/4 c. flour1/4 tsp. cinnamon Heat oven to 400 degree. Grease bottom only of 12 muffin cups, or line with paper baking cups. Prepare Streusel Topping; set aside.Beat milk, oil, vanilla and eggs in large bowl. Stir in flour, sugar, baking powder and salt all at once just until flour is moistened (batter will be lumpy). Fold in blueberries. Divide batter evenly among muffin cups. Sprinkle each with about 2 teaspoons topping.
Bake 20 to 25 minutes or until golden brown. Immediately transfer to wire rack to cool. Serve warn if desired.
Streusel topping: Cut butter into flour, brown sugar and cinnamon using pastry blender, until crumbly.
